History of Todai

Todai Restaurant is a seafood and sushi restaurant. It was first opened in Santa Monica in the year 1985. In 1997, there were already a total of 10 Todai restaurants located in Southern California cities such as Glendale, Orange, Woodland Hills, and Studio City. Investors formed Todai Franchising, LLC in 1997 and began franchising the concept. In 1998, TFL was restructured under the new leadership of Mr. Hans Kim as CEO. The company opened the first company-owned store in San Jose, CA in 1998 and the first overseas store in Hong Kong in 2002. In 2006, TFL assigned its intellectual property as well as franchisor rights to Todai SSB, Inc. Todai SSB, Inc. continues to grow with the Todai concept, bringing new Todai Restaurants worldwide – Beijing, China to Seoul Korea, Hawaii, Las Vegas, Hong Kong.

Job Description/Wage Averages

Kitchen Managers:   The job description of this position include: participating in menu development and utilization of food surpluses taking into account number of guests, marketing conditions, popularities, estimating food consumption, purchases, and kitchen supplies; reviewing menus, analyzes recipes and determines daily menus; reviewing food, labor and overhead costs on daily basis; directing food production policy to control costs; supervising cooking and other kitchen personnel and coordinates
their assignments to ensure economical and timely food production; observing methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared according to kitchen system; devising special dishes and develops recipes.

Sous Chef: The job of the Sous Chef includes  developing new recipes, must possess expert knowledge of Asian cuisine food specifications and must be a team player and must possess  training skill.

Procurement Clerk : This person will prepare purchase order, maintain and control food supplies and inventories, contact suppliers to schedule timely deliveries to ensure quality of raw products, resolve shortages, missed, late deliveries, and other problems, analyze supplier trends, follow up on orders placed, verify delivery, and maintain records and supply levels.

Food Service Manager: This position will plan and direct food service operation; develop and manage marketing, sales efforts; supervise and administer inventory/supply orders, quality of service, and food preparation; schedule and assign work duties; train and evaluate employee performance; monitor staff requirements and labor cost, and control budget.
