History of Ruby’s Diner

Ruby’s Diner was first opened on 1982 with menu that include hamburgers, hotdogs and malts. Since then, expansions were realized. The bigger Ruby’s was opened at Orange County; then, after 4 years in Seal Beach Pier, in South coast Plaza’s Crystal Court and in the Fullerton Metro center. With each new Ruby’s, the decor, restaurant size and menu evolved.  In the 1990’s, The Ruby Restaurant Group opened 27 Ruby’s Diners in Southern California, Pennsylvania, Nevada, New Jersey and Missouri.

Ruby’s Management concentrated on maintaining high food and service standards while consistently updating the menu to attract their growing customer base. The menu offers a large variety of breakfast favorites, “Veggie Delights”, a 40% “lighter” in fat “Lite Fries,” salads, sandwiches, lunch and dinner specials, and fountain treats

Job Description/Wage Averages

Restaurant Manager: This position works on assuring that the restaurant will operate efficiently and profitably. He/She is to plan, direct and coordinate a variety of activities of the restaurants. The manager is responsible for the business performance of the personnel in the restaurant, maintaining high standards of food, service, and health and safety.

Cook : This position is responsible in preparing food using the restaurant  specifications and customer preferences as well. He/She must observe all food safety standards including proper food preparation.

Food and Beverage Server: This position will be requesting or taking orders from and serve food and beverages to guests; checking on guest satisfaction and handling the payment and complaints/concerns of customers. He/She must be knowledgeable in service techniques, food and beverage product and practices of responsible alcohol service.

Host/Hostess: This person oversees the activities in the dining room and must lead personnel to provide fast and courteous service to guests; greet guests, escorts them to tables, and provides menus; respond to complaints; assign work tasks and coordinate activities of dining room personnel to ensure prompt and courteous services; inspect dining room serving stations to ensure neatness and cleanliness.
