History of Perkins

Perkins Restaurant and Bakery is a well known American casual dining restaurant that serves breakfast all day long. Perkins first began as Perkins Pancake House but evolved into a restaurant and bakery. The casual dining Perkins Restaurant and Bakery was started by Matt and Ivan Perkins in 1958 in Cincinnati, Ohio.

The two men ran the restaurant until August 1979 when they both retired selling out the company which included the trademark and distribution rights to a Memphis based Holiday Inns, Inc.   Finally in 1985 Donald N. Smith organized a holding company now called the Restaurant Company (“TRC”) to purchase the Perkins system from Holiday Inn Corporation.   Castle Harlan, the New York-based private equity investment firm, announced it completed the acquisition of the Restaurant Company for $245 million dollars. Today The Company has 151 company operated and 331 franchise full-service restaurants in 34 states and five Canadian provinces. May 3, 2006 the Restaurant Company acquired Marie Callender’s best known for their freshly baked pies.

Job Description/Average Wage

Waitress/Wait person: This is the person who takes the customer’s orders, turns them into the kitchen, and then delivers the orders to the table. The waitress/wait person usually sets the customer up with table settings, glass of cold water, and salads or soups before they bring out the order. Then they will ask the customer if they would like a dessert item and serve that before they deliver the ticket for the meal. Wait people are paid the average wage in accordance to the area where they live and work.

Shift Leader: The shift leader is responsible for the people who are on their shift making assignments to the areas they cover, making sure that they are punched in on time and in some restaurants setting their schedules. The average wage for a shift leader is $10.00 an hour.

Line Cook: The line cook is responsible for one or more items that are to be prepared with the meals. Often they may be in charge of doing grill items, or the French fry machine. Just as an example they might be in charge of making baked potatoes and vegetables. The average wage for a line cook is determined by their experience and the length of time they have worked for the company.
