Don Pablo’s is a chain of Tex-Mex restaurants established in Lubbock, Texas, in 1985. The chain has 45 restaurants in 15 states. The menu features Tex-Mex items, made from scratch salsa, tortillas and sauces and a variety of other Mexican specialties. Don Pablo’s is a subsidiary of Avado Brands of Madison, Georgia. The company filed for bankruptcy in September 2007and consequently closed or sold about half of its 90 locations. The company had formerly filed for bankruptcy in October 2004. In February 2008, 41 Don Pablo’s locations were purchased by Rita Restaurant Corporation.

Job Description / Average Wage

General Manager: As a General Manager at Don Pablo’s restaurant your daily duties and responsibilities are as follows:

  • Provide leadership and vision to the organization by means of assisting the board and staff   with the development of long range along with annual plans, and with the evaluation and   reporting of progress on plans.
  • Oversee preparation of an annual report summarizing progress on short and long   range plans.
  • Research and write discussion papers, analysis documents and proposals as needed   to help the organization in determining and meeting its long and short term goals.
  • Administer hire and distribution of music scores and parts, including any performing rights payments.
  • Supervise the booking of tours this includes: venue liaison from negotiating the deal to distribution of audience questionnaires, programs and merchandise.
  • Supervise organization of company transport, subsistence and accommodation.

The annual salary for a General Manager is around $45,000 to $67,000.

Assistant Manager: As the Assistant Manager of the restaurant you will be supervising numerous people in addition to  handling general complaints, last-minute schedule changes,  kitchen mess-ups and inventory problems. Assistant managers are leaders and must represent the company and themselves well by acting as a role model to the people reporting to them. Assistant managers are generally the ones accountable for recruiting and interviewing quality people to staff your location, as well as making sure these new employees transition as smoothly as possibly into  their jobs. You should be a good teacher who tries to help employees who are having difficulty picking up new skills. Theyearly salary for an Assistant Manager   is around $45,000-$50,000.

 

Cashier: The Restaurant Cashier is in power of the register. This would consist of cash and credit card transactions, tipping out wait staff, and balancing the register at the end of the shift. The cashier may assist the wait staff with different tasks. He/She /she must be capable with computerized register system and have good cash handling skills. Must have experience in retail sales, and be professional, polite, and consistent.   The average wage for this job is $7—$12 an hour.
