History of Rita’s Ices

Rita’s Italian Ice began in 1984 when Bob Tumolo, a former Philadelphia firefighter, decided to open a small Italian Ice business to augment his income. So, he opened his first store in Bensalem, Pa. and named the business after his wife, Rita.

Bob began by selling the “made fresh daily” Italian Ice from a small porch window, he and his brother John had opened three stores in the Philadelphia area by 1987. This then was the humble beginnings and customers started approaching Tumolo, wanting to know how they could own a Rita’s Water Ice. In 1989, Tumolo started franchising the business, and by 1996, Rita’s had grown to more than 100 stores in nine states.

Job Description/Wage Averages

General Manager: The general manager oversees all the activities of the restaurant including opening, mid and closing shifts and other key operation activities of the company. He/She must have strong sales building skills, knowledge of profit and loss, excellent communication skills, and a positive, results oriented attitude. He/She is engaged in strategic planning and must head the team in attaining the company goals.  The average wage can start at around $12 per hour.

Chef: This person is engaged in food specifications, portion control, recipes and sanitation; control food and labor costs. He/She must ensure that the guest will be able to get satisfaction.  The average wage can start at around $8 per hour.

Dish Washer: This person ensures that all dishes, glasses, utensils and equipment are cleaned, sanitized and stored to maintain cleanliness.  The average wage can start at around $8 per hour.

Guest Server: He/She deals with every guest. He/She provides the guests with a clean, comfortable environment for their unique dining experience. Make sure that every Guest is thanked and invited to return.  The average wage can start at around $8 per hour.

Cashier: This person works with the restaurant manager, servers, and guests in all sales transactions. Cashiers are responsible for screening and directing incoming phone calls, as well as handling to-go and pick-up food orders and he has to help the servers in the processing of bills-of-sale and credit card transactions.  The average wage can start at around $8 per hour.
